Parmesean Crusted White Fish with Sweet Potato Fries
We have to admit, our favorite part of this combination is the sweet potato fries. They are simple, packed full of nutrition, and go with just about any meal (we love pairing them with a big fat beef filet). The white fish in this recipe acquires the taste of whatever you put on it (which means it’s pretty tasteless on its own), so be generous with your spices and garnishing. A nice green salad to go on the side, and voila. Simple, summery, scrumptious.
What you’ll need for the fish:
2 pieces (2 ounces) fish fillet
1/4 cup grated Parmesan Cheese
1/2 teaspoon paprika
1/2 teaspoon salt
1 teaspoon dried parsley flakes
1/2 teaspoon ground black pepper
2 tablespoons olive oil
Fresh lemon
What you’ll do:
1. Pre-heat the oven to 350 degrees Fahrenheit.
What you’ll need for the fries:
2-3 Sweet Potatoes, cut length wise
Several glugs of olive oil
1-2 garlic cloves, minced or pressed
Sea salt
Paprika
(brown sugar and flour are optional)
What you’ll do:
1. Put potatoes, olive oil, garlic, a few dashes of sea salt and paprika in a large Ziploc (you can add a few pinches of flour and brown sugar too if you want to make them crispier and accentuate the sweetness).
2. Make sure the Ziploc is closed securely.
3. Shake it!
4. Line a baking tray with parchment paper and bake at around 250 Celcius
After 10 minutes, flip the fries and bake for another 10 minutes.
